VINIFICATION AND AGEING
Still a year before the harvest and vinification, the grapes of the different varieties that make up the Family Collection, were duly selected and monitored according to the oenological objective. These grapes harvested in their ideal state of maturity in 20 kg boxes were vinified separately. The entire process was carried out by gravity for the fermentation vats, and this took place for 20 days with a prolonged maceration that provides this wine with unique characteristics of ripe fruit. Its aging period of 14 months in new French wood, gives it a great aromatic amplitude and a remarkable balance throughout its long life. The bottle matures for more than 14 months.
CONSUMPTION AND LONGEVITY
Ideal consumption temperature at 16 ° C. Accompanies meat and fish dishes made from traditional Mediterranean cuisine, game dishes, cheeses and vegetarian cuisine with aromatic intensity. The particular freshness and elegance of this batch, also gives it ideal characteristics to accompany delicate fusion dishes. Guard wine, with high aging potential.
WINEMAKER NOTES
Notes of ruby color and aromatic intensity of ripe fruit, with a light mentholate note, which makes your set elegant and harmonious. The excellent structure and the balance between its fine tannins and acidity, guarantee you personality and a long life. Long and mineral finish. Concentration and delicacy are its notes of luxury. Wine that deserves an attentive, unhurried taste.
